Congee with Cilantro Ginger Chicken Meatballs!

Warming congee with cilantro ginger chicken meatballs!

We asked our friend Chloe Walsh better known as @chloecooks__ (IG) to create a favorite recipe using our hot garlic.  Below is a summary from her blog entry.  Enjoy!

When i say this is my favorite chili crunch / chilli garlic crunch out there, please know - i am not lying! i first tried by picking up a jar from @altadenabev and it was love at first taste, and unfortunately for me, was gone in less than a week, only having been consumed by me! so as you can imagine, i truly was obsessed from the get go!

Meatballs
1 lb of minced chicken
2 inches of ginger
1/2 bunch of cilantro
1 tsp of salt
1 tsp @mamateavs
1 tsp white pepper
1/4 cup of panko
1/2 white onion
5 cloves of garlic
1 large egg



Congee
1 cup of white rice, rinsed
1 inch of ginger, finely diced
3 cloves of garlic, finely diced
1/4 white onion, finely diced
6 cups of water

To finish
1 tbsp fish sauce
1 tbsp sesame oil
2 scallions, chopped on the bias
7 minute jammy egg
white pepper
as much @mamateavs as you want


Using a food processor, blend the 2 inches of ginger, 1/2 bunch of cilantro, 1 tsp salt, 1 tsp of mama teavs, 1 tsp white pepper, 1/2 white onion, 5 cloves of garlic into a fine paste.

Using a large mixing bowl, add the paste to the minced chicken along with the panko and egg and mix well. set aside in the fridge to cool and hydrate for at least 1 hours.

Once the meatballs have chilled, roll them into equal sized balls (approximately 2 inch in size) and bake in the oven at 375 degrees for at 45 minutes, turning halfway through.

While the meatballs are cooking, get started on the congee. in a heavy bottomed pan over medium heat, sauté the remaining ginger, garlic and onion until fragrant and soft. add in the rinsed rice and toast gently. add in the water and simmer on low until the rice is cooked, and then carry on beyond cooked and keep on stirring! once the rice is porridge like in consistency, it’s time to serve!

Serve in your favorite bowl, with as many meatballs aa you like, the fish sauce, sesame oil, scallions, jammy egg, white pepper and of course lots of @mamateavs
